Ingredients

  • Leftover bread 200g (any type, cubed)
  • Leftover vegetables 200g (carrots, celery, onions)
  • Chicken or vegetable broth 1L
  • Ginger 3 slices
  • Garlic 2 cloves
  • Bay leaves 2
  • Fresh thyme 1 tsp
  • Salt and pepper to taste
  • Olive oil 2 tbsp

Preparation Method

Transform stale bread into healing soup! Cube leftover bread and toast lightly. Dice leftover vegetables. Heat olive oil, sauté vegetables until soft. Add broth, ginger, garlic, bay leaves, and thyme. Bring to boil, add toasted bread cubes and simmer for 20 minutes until bread breaks down and thickens soup. Remove bay leaves and ginger slices. Season with salt and pepper. This creates a hearty, warming soup from bread that would otherwise be wasted.
